- 800g Half chicken
- 20g Sand ginger powder
- 5g Salt
- 5g Sugar
- 2g White pepper
- 30ml Light soy sauce
- 15ml Sesame oil
- 30ml Cooking oil
- 15g Scallions, chopped
- 10g Coriander, chopped
Steps
- Rinse the chicken thoroughly and pat it dry with paper towels.
- In a bowl, combine the sand ginger powder, salt, sugar, and white pepper. Rub this mixture evenly over the chicken.
- Place the marinated chicken in a heatproof dish. Steam it over high heat until fully cooked.
- While the chicken is steaming, in a small bowl, combine the light soy sauce and sesame oil.
- Once the chicken is cooked, remove it from the steamer. Heat the cooking oil until smoking, then carefully pour it over the chicken to crisp the skin. Drizzle with the prepared sauce and garnish with chopped scallions and coriander. Serve immediately.
