Ingredients
- Somen noodles
- Water (for boiling)
- Ice water
- Cucumber
- Tomato
- Fresh ginger
- Mentsuyu (concentrated noodle soup base)
- Water (for mentsuyu)
Steps
- Wash and julienne the cucumber. Wash and slice the tomato. Peel and finely grate the fresh ginger.
- In a small bowl, combine mentsuyu and water (for mentsuyu). Stir well and chill in the refrigerator.
- Bring a large pot of water (for boiling) to a rolling boil. Add somen noodles and cook according to package directions, typically 2-3 minutes.
- Once cooked, immediately drain the somen noodles using a colander. Rinse thoroughly under cold running water, then transfer to a bowl of ice water to chill completely.
- Drain the chilled somen noodles well. Divide them into serving bowls, top with prepared cucumber, tomato, and grated ginger. Serve immediately with the chilled mentsuyu dipping sauce on the side.
