Ingredients
- 200g Black glutinous rice
- 100g Dried longan meat
- 80g Rock sugar
- 400ml Coconut milk
- 600ml Water
Steps
- Rinse the black glutinous rice thoroughly. Soak it in water for at least 30 minutes, or preferably 1-2 hours.
- Rinse the dried longan meat under running water.
- Drain the soaked rice. Combine the drained black glutinous rice and water in a pot. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the rice is tender and chewy. Stir occasionally to prevent sticking.
- Add the rinsed dried longan meat and rock sugar to the pot. Stir until the rock sugar is fully dissolved. Continue to simmer for another 5-10 minutes.
- Pour in the coconut milk and stir gently to combine. Heat through for about 1-2 minutes, but do not boil.
- Ladle the Black Glutinous Rice with Longan and Coconut Milk into serving bowls and serve warm.
