- 2 tbsp gypsum powder
- 150ml water (for tofu)
- 100g brown sugar
- 20g old ginger (sliced)
- 200ml water (for syrup)
Steps
- Mix the gypsum powder with water (for tofu) until dissolved.
- Blend the silken tofu until smooth, then strain through a fine-mesh sieve.
- Bring the strained tofu mixture to a boil over medium heat, stirring constantly to prevent burning.
- Quickly pour the boiling tofu mixture into a serving bowl containing the gypsum solution. Do not stir. Cover and let it set for at least 15-20 minutes.
- Combine brown sugar, sliced old ginger, and water (for syrup) in a small pot.
- Bring the ginger syrup to a boil, then reduce heat and simmer for 5-10 minutes until the sugar is dissolved and the ginger flavor is infused. Remove ginger slices before serving.
