- 1 medium (approx. 500g) Ripe Papaya
- 80g Rock Sugar
- 1.5 Liters Water
- 5g Goji Berries (optional)
Steps
- Soak the dried snow fungus in water until softened, about 30 minutes.
- Trim off the hard yellow base from the softened snow fungus, then tear it into small pieces.
- Peel and deseed the papaya, then cut it into bite-sized chunks.
- Bring water to a boil in a pot. Add the torn snow fungus.
- Reduce heat and simmer the snow fungus for 30 minutes until it becomes tender and slightly translucent.
- Add the papaya chunks and rock sugar to the pot.
- Continue to simmer for another 15-20 minutes, or until the papaya is tender and the sugar has dissolved.
