- 1 whole chicken, approximately 1.2 kg
- 100g ginger
- 50g scallions
- 2 tsp salt
- 1/2 tsp white pepper
- 2 tbsp Shaoxing wine
- 2 tbsp sesame oil
- 100ml peanut oil
- 3 tbsp light soy sauce
- 1 tsp sugar
- 2 tbsp water

- Prepare the chicken: Rinse the chicken thoroughly and pat dry. Rub the chicken inside and out with salt and white pepper.
