- 500g chicken thigh, cut into bite-sized pieces
- 300g winter melon, peeled and cut into 2cm cubes
- 3-4 pieces conpoy (dried scallops), soaked until soft and shredded
- 2 slices ginger, thinly julienned
- 1 tbsp light soy sauce
- 1 tsp sesame oil
- 1 tsp sugar
- 1 tbsp cornstarch
- 1/2 tsp white pepper
- 1 tbsp cooking wine (e.g., Shaoxing wine)
Steps
- In a bowl, combine chicken thigh pieces with light soy sauce, sesame oil, sugar, cornstarch, white pepper, and cooking wine. Marinate for 15 minutes.
- Arrange winter melon cubes evenly at the bottom of a heatproof dish. Place the marinated chicken on top of the winter melon.
- Sprinkle shredded conpoy and julienned ginger over the chicken.
