Ingredients
- 200g Red Beans
- 100g Rock Sugar
- 1.5 Liters Water (for red beans)
- 100g Glutinous Rice Flour
- 80ml Water (for glutinous rice balls)
- 20g Granulated Sugar (for glutinous rice balls)
Steps
- Rinse red beans and soak in water overnight, or for at least 4 hours.
- Drain the soaked red beans. Add fresh water to a pot with the red beans.
- Bring to a boil, then reduce heat and simmer until the red beans are very soft and mushy, stirring occasionally.
- Add rock sugar to the red bean mixture and stir until dissolved. Mash some of the beans for a thicker texture.
- In a separate bowl, combine glutinous rice flour, water, and granulated sugar. Mix until a smooth dough forms.
- Roll the dough into small, bite-sized balls.
- Bring a small pot of water to a boil. Add the glutinous rice balls and cook until they float to the surface. Continue cooking for another minute.
- Scoop out the cooked glutinous rice balls and immediately transfer them to the warm red bean pudding.
- Serve warm or chilled.
