Ingredients
- 1 whole chicken (about 1.5kg)
- 5g Cordyceps Sinensis
- 10 red dates
- 15g goji berries
- 10g dried longan
- 15g Huai Shan (Dried Chinese Yam)
- 30g ginger slices
- 20g green onions
- 5g salt
- 2g white pepper
- 30ml Shaoxing wine
- 1000ml water
Steps
- Clean the whole chicken thoroughly and blanch it in boiling water.
- Rinse the Cordyceps Sinensis, red dates, goji berries, dried longan, and Huai Shan.
- Stuff the chicken cavity with some ginger slices and green onions.
- Place the blanched chicken in a large heatproof bowl or ceramic pot.
- Arrange the Cordyceps Sinensis, red dates, goji berries, dried longan, Huai Shan, and remaining ginger slices around and inside the chicken.
- Season the chicken with salt, white pepper, and Shaoxing wine.
- Pour water over the chicken until it is mostly submerged.
- Steam the chicken over high heat for approximately 90-100 minutes, or until tender.
