Ingredients
- 1 can (approx. 180g) canned dace with salted black beans
- 4 large eggs
- 2 tablespoons chopped green onions
- 3 tablespoons cooking oil
- 0.5 teaspoon sesame oil
- 1 teaspoon cornstarch
- A pinch of white pepper powder
Steps
- Open the can of dace with salted black beans. Carefully drain most of the oil from the can. Mash the dace with a fork, breaking it into smaller pieces. You can remove the main bones if preferred, but they are usually soft enough to eat.
- In a bowl, beat the eggs. Add sesame oil, cornstarch, white pepper powder, and chopped green onions. Whisk well until combined.
- Heat cooking oil in a non-stick pan over medium heat. Add the mashed dace to the pan and stir-fry for about 1 minute until fragrant.
- Pour the egg mixture evenly over the dace in the pan. Let it cook undisturbed for about 3-4 minutes until the edges are set and the bottom is golden brown.
- Carefully flip the omelet over and cook the other side for another 2-3 minutes until cooked through and golden.
- Transfer the fried egg with dace to a plate. Serve hot, optionally with steamed rice.
