Ingredients
- 600g choy sum
- 80g garlic cloves
- 45ml anchovy oil
- 2tbsp vegetable oil
- 1tsp salt
- 0.5tsp white pepper
- 2tbsp light soy sauce
Steps
- Prepare wok over medium-high heat. Add vegetable oil and heat until shimmering.

- Increase heat to high. Add choy sum to the wok and stir-fry quickly, tossing continuously for even cooking.
- When choy sum is nearly tender-crisp, drizzle anchovy oil over the vegetables.
- Add salt, white pepper, and light soy sauce to the wok. Toss everything together quickly to combine flavours.
- Transfer to serving plate immediately and top with the reserved crispy garlic pieces.
