- 2 tbsp light soy sauce

- 1 tsp sugar
- 1/2 tsp white pepper
- 3 tbsp water (or chicken stock)
- 1 tbsp minced ginger
- 2 tbsp chopped green onions (for garnish, optional)
Steps
- In a large bowl, combine the ground pork, water chestnut starch, light soy sauce, oyster sauce, sesame oil, sugar, white pepper, water, and minced ginger.
- Mix well in one direction until the mixture is sticky and well combined. This helps create a springy texture.
- Transfer the seasoned pork mixture to a heatproof shallow dish and flatten it into an even patty. Make a slight indentation in the center for the egg yolks.
- Place the salted egg yolks on top of the pork patty.
